{"id":2069,"date":"2009-04-04T14:21:01","date_gmt":"2009-04-04T14:21:01","guid":{"rendered":"http:\/\/chopsybaby.com\/mag\/?p=2069"},"modified":"2018-07-02T13:57:34","modified_gmt":"2018-07-02T12:57:34","slug":"spinach-risotto-from-filippo-berio","status":"publish","type":"post","link":"https:\/\/chopsybaby.com\/magazine\/spinach-risotto-from-filippo-berio\/","title":{"rendered":"Spinach Risotto from Filippo Berio"},"content":{"rendered":"<p>Spinach Risotto from Filippo Berio<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-2070\" title=\"recipe\" src=\"http:\/\/chopsybaby.com\/magazine\/wp-content\/uploads\/2009\/04\/recipe.gif\" alt=\"recipe\" width=\"258\" height=\"343\" srcset=\"https:\/\/chopsybaby.com\/magazine\/wp-content\/uploads\/2009\/04\/recipe.gif 258w, https:\/\/chopsybaby.com\/magazine\/wp-content\/uploads\/2009\/04\/recipe-225x300.gif 225w\" sizes=\"auto, (max-width: 258px) 100vw, 258px\" \/><\/p>\n<p>Serves 4<br \/>\nPreparation: 10 minutes<br \/>\nCooking time: 30 minutes<\/p>\n<p>Ingredients<br \/>\n350g (12oz) fresh spinach, washed well<br \/>\n1 medium onion, finely chopped<br \/>\n1 garlic clove, finely chopped<br \/>\n4 tbsp Filippo Berio Olive Oil<br \/>\n350g (12oz) risotto rice<br \/>\n120ml (4fl oz) dry white wine<br \/>\n1.2 litres (2 pts) hot vegetable stock<br \/>\n1\/4 teaspoon freshly grated nutmeg<br \/>\n75g (3oz) freshly grated Parmesan cheese<\/p>\n<p>Method:<br \/>\n1. Drain the washed spinach well, remove any tough stalks and chop, set aside.<\/p>\n<p>2. Heat the olive oil in a large saucepan then add the onion and cook for about 5 minutes over a medium heat until the onion has softened.<\/p>\n<p>3. Add the garlic and risotto rice and cook stirring until all of the rice is coated in the oil. Add the wine and boil for 1 minute.<\/p>\n<p>4. Begin to add the hot stock a ladle at a time. Continue to stir until most of the liquid is absorbed then add further stock in this way.\u00a0 After 15 minutes when the rice is almost cooked, and all of the stock has been added, add the spinach. Stir over the heat until wilted. The consistency of the risotto should creamy and the rice just tender.<\/p>\n<p>5. Remove the pan from the heat and stir in the nutmeg and season if needed.<\/p>\n<p>6.
