Brush the bread on both sides with 6 tbsp of olive oil. Place on a baking sheet and bake at 200C\/400F\/Gas 6 for 5 minutes or until golden and crisp. Cool slightly.<br \/>\n2. Rub one side of the bread with the cut garlic and spread a little goat\u2019s cheese over each. Top with 2 sun blush tomatoes and a little heap of basil leaves. Drizzle the remaining oil over the bruschetta and serve.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-2631\" title=\"clip_image006\" src=\"http:\/\/chopsybaby.com\/magazine\/wp-content\/uploads\/2009\/05\/clip_image006.jpg\" alt=\"clip_image006\" width=\"240\" height=\"240\" srcset=\"https:\/\/chopsybaby.com\/magazine\/wp-content\/uploads\/2009\/05\/clip_image006.jpg 240w, https:\/\/chopsybaby.com\/magazine\/wp-content\/uploads\/2009\/05\/clip_image006-150x150.jpg 150w, https:\/\/chopsybaby.com\/magazine\/wp-content\/uploads\/2009\/05\/clip_image006-36x36.jpg 36w, https:\/\/chopsybaby.com\/magazine\/wp-content\/uploads\/2009\/05\/clip_image006-115x115.jpg 115w\" sizes=\"auto, (max-width: 240px) 100vw, 240px\" \/><\/p>\n<p><strong>Tomato Bruschetta<\/strong><br \/>\nServes 4 &#8211; 6<br \/>\nPreparation time: 10 minutes (plus 30 minutes marinating)<\/p>\n<p>French bread or Ciabatta loaf<br \/>\n2 garlic cloves, peeled and halved<br \/>\n8 ripe plum or vine-ripened tomatoes, diced<br \/>\n8 tbsp Filippo Berio Extra Virgin Olive Oil<br \/>\nSalt and freshly ground black pepper<br \/>\n8-10 basil leaves<\/p>\n<p>1. Mix the diced tomatoes with the olive oil and season to taste with salt and pepper, set aside for 30 minutes.<br \/>\n2.\u00a0 Toast (or grill on barbecue) 12 thick slices of bread from the ciabatta loaf or French stick.<br \/>\n3. Rub with garlic while still hot then spoon on the tomatoes.
