Edam and Veggie Bean Wraps
There is no need for school lunch boxes to contain the horror of 1980s styled sweaty cheese sandwiches. This recipe for Edam and Veggie Bean Wraps, is simple enough to let children help parents prepare and healthy enough to keep the school lunch box police happy.
The wraps can be made in advance and wrapped in cling film.
For little ones not so keen on tomato salsa, replace with barbecue sauce.

Preparation time: 10 minutes
Ingredients
1 small red pepper, deseeded and diced
1 x 160g can sweetcorn kernels, drained
1 x 420g can mixed beans, drained and rinsed
90ml (6tbsp) ready prepared tomato salsa
6 soft flour tortillas
125g (4oz) shredded iceberg lettuce
125g (4oz) Original Dutch Edam wedge, cut into cubes or grated
60ml (4tbsp) low-fat Greek style yogurt
Method
In a large bowl, mix together the red pepper, sweetcorn and mixed beans with the tomato salsa.
Place a flour tortilla on a chopping board and arrange some of the lettuce over the base of the tortilla. Spoon some of the bean mixture down the centre of the tortilla, then top with a handful of the grated Edam. Spoon 15ml (1tbsp) of the yogurt over the top.
Carefully roll up the tortilla, tucking the ends in as you go, to encase the filling. Repeat with the remaining tortillas and filling. Cut in half and serve immediately.
