Fruity dishes from Munch Bunch

These delicious  dishes from Munch Bunch are ideal for the warmer weather and to boost you and your little one’s intake of fruit.

 

Banana Split

Serves 1

Preperation time five minutes

 

 

Ingredients

1 ripe banana
1 raspberry Munch Bunch Fromage Frais
Small handful fresh raspberries
Chocolate sauce or melted chocolate
Toasted chopped nuts

 

Method

 

Split the banana lengthways.

 

Mix together the fromage frais and raspberries and use to sandwich the banana back together.

 

Drizzle with chocolate sauce or melted chocolate and sprinkle over the chopped nuts. Delicious!

 

Variations

Why not try different kinds of fruits – such as peaches, pineapple, mango, strawberries, blackberries, and blueberries. Tinned, fresh or frozen they all work well.

 

 

 

Berry Messy

Serves 2

Preparation time 20 minutes

Ingredients

Juice and zest of half a lemon
15g (½oz) icing sugar
125g (5oz) blueberries
2 x Munch Bunch Mega Pots
Small handful granola

 

Method

 

Place the lemon juice and zest into a small pan with the icing sugar and 3tbsp water. Heat until the sugar has dissolved. Bubble for a minute before adding the berries. Cook for 1-2 minutes until the berries are slightly soft. Then leave to cool.

 

Layer the fromage frais and cooled berry mixture in 2 serving dishes or short tumblers and top with the granola. Then simply dig in!

 

 

 

 

Yogurt cake with strawberry ice and peaches

Serves 8

Preparation time 10 minutes

Cook time 40 minutes

 

 

Ingredients

 

For the Strawberry Ice
4 x Munch Bunch Double Up Fromage Frais
100g (3½oz) fresh strawberries, chopped
3tbsp strawberry fruit sauce

2 x strawberry Munch Bunch Mega Pots
115g (4oz) caster sugar
250g (9oz) self-raising flour, sieved

4tbsp sunflower oil
2 eggs, beaten

To serve:
Fresh peaches, sliced

You will also need: 900g (2lb) loaf tin, lined with baking parchment

 

Method

 

Start by making the strawberry ice: spoon the Munch Bunch Double Up into a freezer proof bowl and add the strawberries. Swirl through the strawberry sauce and place in the freezer for 2-3 hours until solid.

 

Preheat oven to 180°C, 375°F Gas Mark 4.

 

Place the yoghurt into a large mixing bowl. Add the sugar, flour, oil and eggs. Mix together until smooth. Pour into the tin and bake for 40 minutes until well risen and golden. Insert a skewer into the cake – it should come out clean when it’s ready.

 

Serve the cake warm with scoops of strawberry ice and slices of fresh peach.

 

 

Wobbly Milky Jelly

Serves 4

Preparation time 10 minutes plus chilling

 

 

Ingredients

 

135g-packet blackcurrant or raspberry jelly
3 pots raspberry Munch Bunch Drinky +

To serve:

Fresh summer fruits, such as strawberries, blueberries and raspberries.

 

Method

 

Cut the jelly into cubes and place into a jug with 150ml (¼pt) boiling water. Microwave for a few seconds to melt the jelly cubes, stirring in between bursts.

 

Add the Munch Bunch Drinky + and top up to 600ml (1pt) with cold water.

 

Pour into 4 x 150ml (¼pt) jelly moulds or glasses and refrigerate until set.

 

Serve the jellies with the fresh summer fruit.

 

 

 

Smoothies: Slurpy Strawberry and Banana

Serves 2

Preparation time 3 minutes

 

 

Ingredients

 

1 small banana, roughly chopped
5 strawberries, washed and topped
1 pot strawberry Munch Bunch fromage frais or yogurt
150ml milk

Totally Tropical

½ banana, roughly chopped
3tbsp drained tinned pineapple pieces
3tbsp drained tinned mango pieces
150ml orange juice

Berry Delicious

Handful frozen summer fruits
2 pots raspberry Munch Bunch Drinky +
150ml apple juice

 

Method

 

Throw everything into a blender and whiz until thick and smooth.

Pour into 2 glasses or into your lunchbox flask.

Keep chilled.

 

Variations

These recipes make great frozen lollies – simply pour into clean lolly moulds and freeze overnight. Or, for a super smooth smoothie simply pass through a sieve.
